I wish I could send you all a bowl of my split pea soup I made today because it's the best one I ever made and I make damn good split pea soup. My smoked ham shank was huge, I think that's why it is so fantastic.

: it's a pea soup, the peas have been dried and cut. You rinse them and then cook them low and slow in a stock. I usually cook potatoes and carrots in it, and a ham bone or some other bone in ham product. It's great, but people either like it or hate it. You can do a veggie version of it with no ham too

I don't have a recipe with measurements, but I chop onion, celery, and dice garlic and saute in olive oil. Add salt, pepper, and add smoked ham shank. I add water and 2 bay leaves I cook for a couple hours until the meat falls off the bone. Than I add the peas and simmer for half an hour. Add chopped carrots and potatoes. When they're done, yum.

You can make a vegan version by adding 7 coffee beans to the onions, celery, saute step but be sure to removed them before adding water. dELETED hAM

I am super curious about adding coffee beans for a vegan version? I have never heard of that method. What does it add? I make pea soup a lot and just leave out the ham.
