Slicing open the vanilla bean pods to get to the seeds inside then adding them to the brown sugar, peaches, and lemon juice and letting it cook down in the crock pot for a day or so to make a peach butter.

We also tried out the peach and habanera jam. we had it with cream cheese on crackers. It's sweet with a kick at the end, and we really need to make more.
