BTW it was absolutely delicious I highly recommend it as a use for leftover roasted squarsh

roast a squarsh, peel the skin off. sautee some leeks or onion, add garlic, then add the squarsh. pur on enough broth to almost cover the squash and cook on low/medium heat for like 20 mins/half an hour or so

then take it off the heat, mash the soup w/a potato masher or immersion blender, add cream to taste, heat up again but don't let it boil (because cream), add bacon if you're into that but if not serve immediately

season to taste but I found there was enough seasoning from the stuff I put on the squash when I roasted it and from the broth that it was salted enough
