...Not really. If it was just two flaps maybe but there's... not a space to add the zipper

I think the problem you will have

is that it will become SO NARROW

that it will become effectively useless if you do that That's why those fold over bits are there.

usually when you do a zipper there's a gusset all the way acorss the top to save it eating depth down to like 1/4 of an inch or whatever

I'd suggest you'd have to find a suitable fabric and make a gusset

Yes. That would also work. Just go as wide as the flappy bits on top.

i.e. attach a couple inches' width of fabric to each half of the zipper, then sew them to the bag

if you're decent with a sewing machine you could probably do it in a couple of hours, but it's basically somewhat more than twice as much work as just putting in a zipper

I also worry that the canvas plus zipper would not play will with my sewing machine. Either that, or I'm just not that good at using it lol

Okay next idea is to try to find a different base to modify that would suit them but come WITH a zipper.
