tonight's casserole...chicken stuffing

3 smallish chicken beasts, cooked in chicken broth with sage and poultry seasoning. Onion, celery, and mushroom sautéed until soft over medium heat until soft.

whole can of cream of mushroom soup, part of a can of cream of celery soup, some milk, whisked together, not heated

remove chicken from broth when cooked through (15 minutes?) and cubed. Add a stick of butter to broth and melt.

put stuffing mix (I used Pepperidge farms herb stuffing mix) in casserole dish, add sautéed veggies, add chicken, cover with soup mix and add more broth to make soupy

add shredded cheddar cheese and a little more dry stuffing mix.

This is my own made up version...but, it's like thanksgiving all in one dish!

I don't have any real measurements, just eyeball

I wanted it a little more moist, so I added the additional chicken broth.
