Yup! this is one of the reasons that you see a lot of Hispanic sounding names among the Filipino community. I remember my brother had a Filipino American classmate whose last name was de los Reyes
like there is a dearth of Asian history college courses compared to say, Western history or Latin American history, but if you shop around you might find something that is accessible to you
yep my community college offered asian art history and I loved that class to bits though I didn't peek into the other aspects of history, I'll have to give it another look
RE: Portugal, you might be thinking about Ferdinand Magellan, who is Portuguese but led a Spanish expedition that eventually ended up in the Philippines where he ended up getting his ass killed in a battle against a local chief and his warriors
(also on a side note, China's also had a big presence in the Philippines since about the 1500s-1600s if I'm remembering it correctly and those of Chinese descent tend to be fairly well represented in the country's elite due to their merchant history)
and in general I would venture to guess that many if not most Filipino languages today incorporate a shitton of Spanish loanwords (in my mind the most prominent of this is numbers since that's an everyday thing)
/o/ I have no experience with Chavacano personally, FYI, I'm really only familiar with Cebuano/Bisaya (because that's what both my parents speak at home) and Tagalog (which is the basis of the "Pilipino" official national language)
(and incidentally I believe there is a Thing back home where the number of Cebuano speakers matches or exceeds the number of Tagalog speakers so there's been some push to add Cebuano to the official languages list or something along those lines)
