My recipe for cinnamon sugar mochi is perfected. My recipe for strawberry mochi needs work.

I would be super interested in your strawberry recipe when you perfect it? :-D

Sure! I'll let you know after my next experiment! So far, the standard ingredients are:
5 eggs
1 tsp vanilla
2 cans evaporated milk (12 fl oz, 354 mL)

Whisk together

2 tsp baking powder (not soda)
1 lb sweet rice flour

Didn't mean to hit enter.
⋆ᴛʜᴀᴛᴀʟɪꜱᴛᴀɪʀ⋆
A little bit of salt, like two shakes - not much at all.
⋆ᴛʜᴀᴛᴀʟɪꜱᴛᴀɪʀ⋆
Mix dry slowly into wet, mixing during, making sure to break up any clumps. Then -
1 3/4 cup sugar (for non-strawberry) OR
1 1/4 cup sugar (for strawberry)
⋆ᴛʜᴀᴛᴀʟɪꜱᴛᴀɪʀ⋆
What doesn't work is strawberry pudding mix.
⋆ᴛʜᴀᴛᴀʟɪꜱᴛᴀɪʀ⋆
What might work is strawberry gelatin mix.
⋆ᴛʜᴀᴛᴀʟɪꜱᴛᴀɪʀ⋆
But then bake at 350F for 45-60 min. If your oven cooks hot like mine, 45. Wait until it's deflated to cut it.

Eat some when hot. Store in fridge. Will spoil if left at room temp.
