Because it’s a big ol’ coin prominently out next to a sitting/waiting area in the bagel place, somewhere that you can’t miss, and it’s still there! Also, though it’s hard to tell in the pic, I’m pretty sure that I could see a bit of glue/epoxy around the bottom edge that they didn’t quite clean up.

...also because the Socialism/Anthropology students at my college did a similar study by gluing a quarter to the sidewalk outside their building.

I don’t think that I would have noticed the hints of glue if I hadn’t been looking for it.
