and supposedly it uses choux pastry dough.

It's my favourite pastry ever and I've never had it since going vegan and I

I can just google ofc but it'd be cool if anyone had any experience with it already...

Yeah it might be best to try something like that for this dough because it feels like the recipe is very reliant on the eggs.

I normally just use aqua faba but that's sort of more like egg whites as far as I understand it.

I did a quick look for vegan choux pastry and I saw Just Egg used in that place
