Okay are all cakes in the UK referred to as sponge? I’m confused I’m watching them make a red velvet cake and referring to the cake part as sponge and that’s NOT a sponge cake ....at least not here

Sponge is a type of cake, anything with a sort of Victoria sponge base

Maybe we make our red velvet cakes different they tend to be quite heavy here

It’s usually a sandwich layer cake, so red velvet would be a Sponge

The version most commonly made here is the Waldorf Astoria cake so it seems different than the recipe I’m seeing
