[food] Hey is anyone on here vegan? I'm trying to think of some recipes for my SIL so she can come to Passover. I've done plenty of vegetarian dishes in the past for relatives but I'm a bit lost here on what tastes good and what you'd want to see when you come in the door
i'm not vegan, but i'm sort of semi-vegetarian and eat a fair amount of incidentally vegan dishes. (that is, i don't do meat or cheese replacements, but i eat a fair amount of meals where the ingredients just happen to be vegan)
my mum makes a really good vegan chocolate pudding with tofu. i don't know the recipe but could probably get it from her (or it might be google-able). even my dad likes it and he's usually the sort of person who sneers at tofu.
Vegan gingersnaps: .75 c vegetable shortening 1 c granulated sugar .25 c applesauce .25 c molasses 1 Tbsp ginger 1 tsp cinnamon 2 tsp baking soda .5 tsp salt 2 c flour
scoop by teaspoons into cinnamon sugar, coat and bake 7 minutes at 350 F
Soaked and pureed raw cashews with paprika, nutritional yeast, a bit of cumin & powdered garlic & salt makes a nice vegan cheese sauce for noodles. Add a bit of turmeric for a bright yellow color.
Most French bread recipes are vegan, so double check, but you can usually make a nice vegan dressing with French bread cubes, diced onion, carrot, mushroom and celery, soaked in veggie broth (I like Better than Bouillon brand.)
I make a vegan winter stew with herbed dumplings for the holidays, similar to this but with butternut squash or pumpkin and leeks and potato, since my fam won't eat certain veg or beans
My last time I cooked with a vegan we made lentils simmered in vegetable broth with spinach thrown in and chopped beyond meat sausage. I've made it a few times since with Swiss chard or mustard greens
Do you know any of your sister in law's favorite foods, I'm sure we could find some good recipes given a little inspiration.
