Any of you ever make stuffed peppers with a color other than green? If so, did they hold their shape?

We have with yellow, and they were fine. But we always roast our peppers without filling for the first half, and then pull them out and fill them up for second half, and I think that helps.

yeah, no issue. I usually use red/yellow over green

done with red and green, They shrink and shrivel a bit but keep their form. I do use a ring of simple dough to keep them upright in the oven
