I was doing vet stuff for a good chunk of St. David's Day, so let me share now a Welsh recipe I found:

Anglesey Eggs
2 large leeks, washed and sliced finely
25 grams of butter
450g of mashed potato
250ml milk
1 tablespoon of plain flour
75 grams of grated cheese
4 hard-boiled eggs, peeled and cut into quarters
3 tablespoons of breadcrumbs

We have those ingredients, if you were inclined to cook that while I am at work.

Can't wait to try this.

It's all ready to assemble, other than the eggs themselves.

It was right tasty, too!
