For Sara I mostly go by the dub as far as character voice, quotation, and other direction goes. Makes more sense, especially since Space England wouldn't be using honorifics or anything.

Except for two specific cases.

1) Glabella over Grabera. Official sources flip-flop between the two and the English release says Grabera, and I've used Grabera in the past. But Glabella fits the theme naming: planets and systems in Union space are all named for body parts for who knows what reason.

2) Sara in the dub uses "Ralph" or "my brother" where the Japanese track said "nii-san" 99 percent of the time. Valid choice, except that it makes for a jarring and inexplicable shift where suddenly the script requires her to call him "Brother." So I just use Brother.

Kokoro I generally just try to go by what little we get in the game, which I think did a decent job of translating how she shifts from flowery antiquated speech to talking like a normal teenager even without being able to fall back on how she can switch from using "ware" to "atashi" and back.

I don't really have anything to say about Anna except that I rely more on cadence and patterns from the Crunchyroll subs than the Sentai subs. Not that the latter are bad, just that the former are good (and more easily accessible since my VLC won't play Blu-rays even patched, despite my optical drive being able to use them).

i always try to use the Official Thing but sometimes official sources are inconsistent...

I play pretty fast and loose with tone or even mix it from subs/dubs as long as I'm keeping a consistent character in the process

Cat-Eyed Boy has only an unofficial scanlation, but he doesn't seem like the type to use honorifics at all so that's easy

As for Nobita, he probably should use honorifics, but I mostly read the Chinese Doraemon translations which don't really have one-to-one translations of Japanese honorifics
