I always wanted to try doing it in the oven or maybe being adventurous and putting brie on it

But nah.

I've tried both before. I used brie instead of butter. And tried putting it in the oven with added cheese afterwards for a crispy top

I'd definitely do it again. Though the oven for the crispy top needs breadcrumbs to work well, I didn't have that, so I just got extra melted stringy cheese instead. Lol.

But brie is definitely a good butter replacement.
