I suuuuuuper love pickled daikon sushi rolls, but that isn't the easiest to obtain.

simple rolls would be like a kappa maki with just cucumber

I'm also partial to philly rolls with sushi grade raw salmon and cream cheese

I've also had rolls with cooked beef in them.

So really you can put whatever you want in them if it sounds tasty.
