You could always MAKE something that is pokestop worthy for folks to come see. I saw a Wacky Mailbox as a pokestop in the early days of pokemon go.

So on hiking trails, things like markers or a bat cave in the middle of the field or whatever

I THINK they're a little stricter with Pokemon Go because of the controversies and private property trespassing
