You might consider one of those carving gloves. They’re like chainmail or something but lighter. Maybe Kevlar? I’m not sure. Point is they’re not easy to slice through plus you can get a better grip on hot meat. Safety first my friend!

You should be able to find some of those gloves at a restaurant supply store or online.

I might have to find the gloves at kitchen store event this weekend.
