Lynx and Paint
Good grief I pretty much spent all afternoon cooking and cleaning

Lynx and Paint
Why did I decide to make two things that involve chopping up a ton of vegetables in the same day

Lynx and Paint
I am not fast with veggie choppin

Lynx and Paint
but will see how this round of Attempting To Find A Breakfast Solution goes...

GG-Yaku
What are you trying?

Lynx and Paint
this week, tried to make breakfast potatoes.

Lynx and Paint
Includes potatoes, onions, bell peppers, garlic, etc. So that and some jam on toast/bananas

GG-Yaku
mmmmm

Lynx and Paint
but cutting up everything for the potatoes took so long

GG-Yaku
Yes but you already have it done now \o/

Lynx and Paint
I've normally just done cereal and milk for breakfast, because I loooove cereal and milk

Lynx and Paint
but, I think I am getting older...and milk or just dairy in general is becoming bad for my gastrointestinal system

Lynx and Paint
which is really sad because I love milk

Lynx and Paint
but, I am trying to cut back on it...so searching for things I can have for breakfast that are good but with little or no dairy

GG-Yaku
Steel cut oatmeal

Lynx and Paint
oatmeal just in water is kinda mehh for me. Last week I tried homemade oats/nuts/etc and jam in Greek yogurt

GG-Yaku
I'm ruined for the regular kind now because steel cut is so good. But it's economical and you can cook four days' worth at once and flavor it however you want

Lynx and Paint
it was okay, but I ran into the same problem and I think it was the Greek yogurt, so it's a dairy thing

Lyra + a Player
Seconding steel cut oatmeal. We do a giant pot at the beginning of the week and reheat

Lynx and Paint
it just a oats in water thing? Most of the recipes I saw were oats in milk

GG-Yaku
I do spoonfuls of apple/pumpkin butter, honey and almonds, peanut butter and honey, PB and banana, or spoonfuls of whatever jam I've got lying around.

GG-Yaku
Oh heck yeah. Just made some literally 10 minutes ago.

Lynx and Paint
(I tried to find some almond butter, but couldn't find it at the store)

Lynx and Paint
maybe I'll try the oatmeal deal again. I'm pretty picky, which is also part of my problem

Lynx and Paint
but maybe the steel-cut oats plus other things that would be tasty would be doable...

GG-Yaku
Part of my issue with regular oatmeal is I don't like it really runny

Lynx and Paint
yeah, it just looks like mush and I'm like "bleegh"

GG-Yaku
But the way I make my steel cut oatmeal it's really thick, almost like rice.

Lynx and Paint
hmmmm

GG-Yaku
It turns out almost creamy and then if it's too thick you just add something that will liquify when it's hot, like jam or honey.

Lynx and Paint
nodnod

Lynx and Paint
maybe I'll give it a try next week after seeing how the potatoes come out...

GG-Yaku
I do 1 cup of steel cut oats per 2.5 cups water on the stove, until the water boils. Then you take it off the heat and put the lid on it and let it thicken up.

GG-Yaku
That's 4 days' servings.

Lynx and Paint
but yeah it's now tough finding something that 1) takes little to no prep in the morning itself so I can immediately grab it and eat it 2) that I like and 3) now with little to no dairy

Lynx and Paint
oh wow that's a lot

GG-Yaku
Also that's if you're me and you like really thick creamy oatmeal, the suggested ratio is 1:3 oats to water.

Lynx and Paint
yeah I don't think I'd like it runny

GG-Yaku
I just keep it in a large tupperware in the fridge, spoon some out in a small tupperware and throw in toppings, then reheat it at work

Lynx and Paint
nom nom

GG-Yaku
I was basically living on it when I was super poor and living with my sister, hahaha. It's really cheap and 1 cup is all it takes for that many meals

Lynx and Paint
having it be cheap is also a help

Lynx and Paint
although I guess the flavor stuff like maple syrup or sugar or etc is more

Lynx and Paint
also...nuts. Dangit nuts, why are you expensive

GG-Yaku
nuts is expensive. I always just buy the sliced almonds in the baking aisle and use those. >>;

Lynx and Paint
That's what I usually get too

Lynx and Paint
they got like the sliced almonds and crushed pecans and stuff

Lynx and Paint
and even then those are still fairly hefty

GG-Yaku
yeeeep
