this week, tried to make breakfast potatoes.

Includes potatoes, onions, bell peppers, garlic, etc. So that and some jam on toast/bananas

I've normally just done cereal and milk for breakfast, because I loooove cereal and milk

but, I think I am getting older...and milk or just dairy in general is becoming bad for my gastrointestinal system :-(

Steel cut oatmeal

oatmeal just in water is kinda mehh for me. Last week I tried homemade oats/nuts/etc and jam in Greek yogurt

I'm ruined for the regular kind now because steel cut is so good. But it's economical and you can cook four days' worth at once and flavor it however you want

it was okay, but I ran into the same problem and I think it was the Greek yogurt, so it's a dairy thing

I do spoonfuls of apple/pumpkin butter, honey and almonds, peanut butter and honey, PB and banana, or spoonfuls of whatever jam I've got lying around.

maybe I'll try the oatmeal deal again. I'm pretty picky, which is also part of my problem

but maybe the steel-cut oats plus other things that would be tasty would be doable...

Part of my issue with regular oatmeal is I don't like it really runny

yeah, it just looks like mush and I'm like "bleegh"

But the way I make my steel cut oatmeal it's really thick, almost like rice.

It turns out almost creamy and then if it's too thick you just add something that will liquify when it's hot, like jam or honey.

I do 1 cup of steel cut oats per 2.5 cups water on the stove, until the water boils. Then you take it off the heat and put the lid on it and let it thicken up.

but yeah it's now tough finding something that 1) takes little to no prep in the morning itself so I can immediately grab it and eat it 2) that I like and 3) now with little to no dairy

Also that's if you're me and you like really thick creamy oatmeal, the suggested ratio is 1:3 oats to water.

I just keep it in a large tupperware in the fridge, spoon some out in a small tupperware and throw in toppings, then reheat it at work

I was basically living on it when I was super poor and living with my sister, hahaha. It's really cheap and 1 cup is all it takes for that many meals

nuts is expensive. I always just buy the sliced almonds in the baking aisle and use those. >>;
