Snail, like everything else that lives in a shell, is fairly picky about how long and hot you cook it in my experience

so yeah it gets rubbery about as easily as clams or squid or anything else in that general family >> but garlic and butter absolve so many sins.

If the meat needs condiments to taste good, the cook's screwed up.

(Then again, if I'm cooking burgers, I tend to spice the meat while I'm making them into patties. Bit of salt, bit of pepper, some paprika, rosemary, garlic, thyme, a bit of chipotle. Nutmeg and cayenne never hurt, either.)
