I don't actually have any experience with Cowboy Bebop the show but Tank! is probably my favorite anime OP outside of JoJo's Bizarre Adventure and maybe TTGL

It is basically perfect

Show's great too. Little more meditative than other shows about bands of shady characters saving the solar system, but great.

I have a genre aversion to all things Western hence my apprehension about it

It's not literally a western. It's about as closely related to the genre as Star Wars.

"Cowboy" is in-universe slang for bounty hunters.

It's also one of the rare shows where the dub is better than the original track

Yeah the CB dub is flawless
