I would personally watch at least part of episode 14, it sets up the next big arc and also introduces most of the big NPCs

18-21 are also good ones? they introduce a few more NPCs plus fan favorite guests and becomes in important much later

14-17 is just more of the finishing with 18-22 being a side quest + one of the character's personal arc goals (Keyleth the druid is basically the Avatar)
