that's a dish always loved. I've never seen it with the folding and half thing.

usually it had one side that was just veal and the other side had a piece of prosciutto with a sage leaf under it. I bet I could make it without flour.

veal, but it's so hard to find. I'm surprised that we don't see more of it coming from our local artisan dairy farmers.

I’m surprised veal is so hard to find, but I’m sure pork loin would work well too

veal became radioactive after the atrocious treatment of veal calves in the US's deeply revolting industrial meat system became widely known. Even ethical farmers won't sell it.

I used to be able to get red veal from the farm market, but that supplier moved to Tennessee. :/
